A Winemaker Talks about America

With this machine, you can filter a wine
so much you can take the color right out,
and that’s what some people want.
Something that looks clear and clean,
no sediment or tartrates or taste.
It goes with the mania for single varietals
and the prejudice against blends.
Those age-old delusions and fantasies
of purity. Sure, you need to be careful
pruning and pressing. But this machine?
It’s the most dangerous one we have.
