The 4th of July is America’s favorite holiday to get together, grill BBQ, and celebrate what it means to be American. It’s also probably our best opportunity to debate whose BBQ is the best. With its regional varieties, the rubs-versus-sauce debates, the fiercely-guarded recipe secrets, arguing about BBQ is almost an American pastime. Few foods better demonstrate the diversity of our country. Growing up in Los Angeles as the child of Korean immigrants, I found that food could be used as a yardstick to test how “American” — how “normal” — someone was.
